Whether you’re looking for something quick and easy after a long day or you’re trying to incorporate more vegetables into your meals, these five zucchini recipes are sure to please.

1. Zucchini and Corn Fritters

These zucchini and corn fritters are a delightful combination that can be whipped up in no time. To get started, you’ll need:

  • 2 medium zucchinis, grated
  • 1 cup corn kernels
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup chopped scallions
  • Salt and pepper to taste

Mix the grated zucchini and salt in a bowl, let it sit for 10 minutes, and then squeeze out the excess moisture. Combine all ingredients in a mixing bowl, and fry spoonfuls of this mixture in a lightly oiled skillet over medium heat until golden brown on both sides. Serve with a dollop of sour cream or your favorite dipping sauce.

2. One-Pan Lemon Garlic Zucchini & Shrimp

This dish is quick to prepare and full of flavor. It requires minimal cleanup, too! You will need:

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Salt, pepper, and red pepper flakes to taste

Heat olive oil in a large pan over medium heat. Add garlic and cook until fragrant. Toss the shrimp in the pan, seasoning with salt, pepper, and red pepper flakes. Cook until shrimp are pink and opaque. Add sliced zucchini and lemon juice, stirring until the zucchini is tender. Serve hot for a refreshing and tangy dinner.

3. Zucchini Noodles with Pesto and Cherry Tomatoes

If you’re looking for a low-carb alternative to pasta, zucchini noodles (or zoodles) are the perfect solution. This meal is both light and satisfying. Here’s what you’ll need:

  • 3 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Lightly sauté the zucchini noodles in a pan over medium heat for about 3 minutes. Stir in pesto and cherry tomatoes until everything is well coated. Sprinkle with Parmesan cheese and season with salt and pepper before serving.

4. Stuffed Zucchini Boats

Stuffed zucchini boats are not only delightful to eat but also to look at. For this recipe, you will need:

  • 3 medium zucchinis, halved lengthwise
  • 1/2 pound ground beef or turkey
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Preheat your oven to 375°F (190°C). Scoop out the flesh from each zucchini half to create boats and chop the flesh. In a skillet, cook the ground beef, onion, and bell pepper until browned. Add chopped zucchini flesh and marinara sauce, cooking until heated through. Fill each zucchini boat with this mixture, top with mozzarella cheese, and bake for 20-25 minutes until the cheese is bubbly. Enjoy hot.

5. Zucchini and Quinoa Salad

This refreshing zucchini and quinoa salad is perfect for a light and healthy dinner option. Gather these ingredients:

  • 1 cup quinoa
  • 2 medium zucchinis, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup almonds, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Cook quinoa according to package instructions and let it cool. In a large bowl, combine cooled quinoa, zucchini slices, feta cheese, mint, and almonds. Whisk together lemon juice, olive oil, salt, and pepper for the dressing, pour over the salad, and toss to combine. Serve chilled or at room temperature for a nourishing meal.
